New look Raspberry Almond Friand

A couple of weeks back, we were invited to a friend’s home for dinner. I wanted to bake something to bring along with us but didn’t want to fuss about it too much. I had bought my first silicone bakeware recently, and this was my chance to use them, two 6 hole Heart shaped Muffin trays by Willow.

I was shopping at our local Supa IGA when I saw these cute muffin trays. The nice people at Willow had pledged to raise $100,000 for the Breast Cancer Research in Australia with the sales from their new range of ‘Easy Flex’ Silicone Bakeware. I couldn’t think of a better reason to buy these muffin trays.

Of late, I have realized that even though I enjoy baking, I am less inclined to experiment on laborious looking recipes, lovely as they may look. More and more often, I find myself looking in the pantry for ingredients I already have to whip up something quick, yet presentable and delicious

I always stock egg whites and ground almonds, the basis of Friands , and If you’ve read my original post on Raspberry Almond Friands with white chocolate ganache, you would see how easy they are to prepare. This time around though, I diluted the ganache with extra cream to simply drizzle on the friand.

Yummy!! I love raspberry and almond, so to combine raspberry and almond together is like heaven on earth.

you could make some for yourself, it's so easy and it wont take you more than 20 minutes! You'll make yourself very happy and perhaps impress someone tremendously!?? Come on, I challenge you! Oh, I dont worry too much about calories, though, everything in moderation is the way to go!

I haven't baked anything in over 2 years. Three summers ago, I went on a craze vegetable roasting spree after watching Ina Garten/Barefoot Contessa's show. I roasted carrots, roma tomatoes, cauliflowers, potatoes, etc. They were all delicious except the cauliflowers made me a does one put it nicely.....gassy. :-0

'Gassy'? uh-huh, very nicely put indeed. We are not unfamiliar with that in this household. My Ming prides in his productions and because we dont have any boys and he's a doting dad, he passes on his habits to our girls!
Sure you won't give baking a go? cakes, I mean. It will open up a whole new dimension for you. It's therapeutic, you know,Ming!

Your blog makes my mouth water - everything just looks so scrumptious!! Those cakes look too good to be true and I may have a go.
I understand what you mean about going for quick and delicious. I only cook things nowadays that are easy to put together with the emphasis on what's quality food.
